Here’s a vegan app that we sometimes just eat for din if we’re exhausted or not that hungry. Super easy, super delish. Hope you enjoy!!
Ingredients:
8 oz Miyoko’s Vegan Mozzarella
1 cup chopped cherry tomatoes
1/2 cup packed chopped basil
2 tsp olive oil
1 tsp balsamic glaze (+ more for drizzle)
1/4 tsp salt
1/4 tsp black pepper
10″ French bread baguette (sliced into 1/2″ thick slices)
Instructions:
Combine chopped cherry tomatoes, chopped basil, olive oil, balsamic glaze, salt, and pepper in a bowl and toss
Slice mozzarella into 1/4″ thick slices and place on baguette pieces
Place 1 tbsp of tomato and basil mixture on top of mozzarella
Drizzle with balsamic glaze and enjoy!
